As promised I have a delicious muffin recipe coming up for you guys :) These are lip smackingly good, and the recipe is courtesy of Jude Blereau from her book titled 'Wholefood Baking'. This book is amazing, I highly recommend it for all sorts of wholesome baking. Birthday cakes, morning tea slices, muffins, pastries, you name it and you can find it in this wonderful book. Life has been very full lately, and i've been cherishing the time being a full time mummy to our gorgeous little girl. She's recently had her 1st birthday, can you believe it? It's been a wonderful year with her, and our family has grown and learnt so much in the process. Second to this I have been running Wholesome Chick on the low key. It's been tough for me to focus on the business when most of my energy and attention has been with our little girl and home, and I send out a really heart felt Thankyou to those of you who have remained loyal to our business and to your own health too. Now we've hit Christmas season 2016 and there is a renewed sense of purpose and enthusiasm for the new year, and I'm pumped to serve you in new and exciting ways!
With this new year we are changing our focus from traditional and intensive consultations, to a focus on keeping things simple and streamlined for you. The point of this is to keep wellness achievable for you, the client, whilst educating you on how to achieve and maintain your health. Too often we are given healthcare plans and advice that seems well and good, but it's actually really hard to implement and becomes overwhelming really easily. So we are cutting through that overwhelm, giving you manageable and actionable steps, and cheering you on to achieve your best selves yet! We are also offering appointments via skype, which means you don't have to get a babysitter and you can have your appointment from the comfort of your own home. I'm also planning to do some educational videos and online learning for you, which is super exciting and a bit scary too. Stretching out of the comfort zone is where growth lies though :) I hope to get this started in the next 1 to 2 months, and will keep you updated on the when and wheres of it all. Onto the muffins - Ingredients:
Preheat oven to 180 and prepare a 12 hole muffin tin with paper cases. Stif flour and baking powder in a bowl. Mix together the milks (or yogurt) in a jug Using an electric mixer, beat the butter and sugar together until light and fluffy. Add the vanilla, half the flour mixture, and half the milk and yogurt mixture. Beat gently until just mixed. Add remaining flour and milk and beat until just combined. Gently fold through your fruit by hand. Spoon the batter into muffin holes and bake for 30 to 40 minutes or until golden. Remove from oven, cool in tin for 10 minutes and then turn out onto wire racks to cool. Enjoy these with loved ones and a cup of tea. Delicious!! Love Ally
